The Czarnecki family has been cooking with wild mushrooms for over a century, starting with a Polish immigrant named Joe in 1916. That obsession eventually found its home in Dayton, Oregon, in a 167-year-old house at the heart of the Willamette Valley — where the rain is steady, the forest floors are generous, and the Pinot Noir ranks among the finest in the world. Fourth generation Chef Owner Christopher Czarnecki and Director of Hospitality Levi Seed have built something rare here: a restaurant with a genuine point of view, and the conviction to stick to it.
The food is rooted in place. Seasonally changing menus weave foraged mushrooms and local ingredients into dishes that draw on global technique without losing sight of where they are — the northern Willamette Valley, one of the great food and wine regions on earth. Every plate is built to be paired with what's in the cellar, and what's in the cellar is unlike anything you'll find at any other restaurant in the country.
That cellar is the work of decades. Levi Seed, a trained chef, certified sommelier, and one of the most compelling young voices in Oregon hospitality, has curated a collection so focused and so deep that some of the producers on the list no longer have the older vintages themselves. Cult labels, library verticals, and bottles that never leave the state — this is a wine program built on genuine relationships and genuine conviction. Dining at the Joel Palmer House is not a transaction. It is a place that has known exactly what it is for a very long time, and it shows.
